Being in the fish-market is an industry that involves always being one step ahead.
And there's no business better suited to it than Carlisle-based, Bell's Fishmongers.
In order to successfully cater to an ever-changing market, Bell's has to take into account everything from festivals, weather and even which month it is.
Owner Tony Bell has to be able to adapt and think about his produce 10 days ahead, every day.
It's a skill that Tony said "comes with being in the business since 1979."
"For example, we've got Chinese New Year coming up this weekend, and because of that we've increased our stock of live lobsters, razor clams, seabass and seabream, which is always popular."
Similarly with Valentines Day coming up, the fishmongers will look to increase their produce of shellfish.
The business is also taking offers for a delectable fish-fuelled hamper, accompanied with a perfectly suited wine to mark the special occasion.
"And as soon as the sun comes out, it's back to seafood platters and prawns," he said.
The family-run institution operates two shop fronts in Carlisle, a main store in Kingstown and a fish counter at Pioneer Foodstore in Rosehill.
"I've spent 20 years in Carlisle markets, that's were we built our name, reputation and trade up.
"But the way shopping changed and the trends of shopping changed, I decided it was necessary to put our main front up here in Kingstown," he said.
Whilst Covid-19 has stifled a lot of industries, Tony has excelled under the pressure.
Whether that be from his DHL nation-wide fresh fish delivery service or making his own delivery trips to Peterhead twice a week to ensure there was always produce on the shelves.
"We kept the continuity of customers and continuity of fish supply, admittedly I didn't have as much variety but, it meant I still had a presence.
"Ensuring we were heading to Peterhead twice a week was one of the best decisions I've made," he said.
The best thing about owning the business for Tony is "control".
"I've got control over the freshness of my produce, I know exactly what's going on all the time and what's coming and going.
"Over the last 20 years, there's been plenty of businesses have had a pop at doing what we do, but we're one the only ones still standing," he said.
