A scran haven, located in the Atlas Works in Denton Holme, celebrated its seventh anniversary earlier this week.
The superbly named Com-For-T street eats, specialises in mouth-watering baking and meals that push the boundaries of the imagination.
Owner Alan Simpson, who has been in the food industry for 23 years, has worked 'everywhere and anywhere' within Carlisle and has even spent five years cooking for Eden Valley Hospice.
"I've always wanted to be a chef ever since I was very young, everyone else was into the Beano and I was reading cookbooks.
"With working in restaurants, I was getting a bit bored being told what to cook all the time, I always thought I had better ideas but wasn't really allowed to do it," he said.
On his days off, Alan would start making ready meals available for pick-up, which eventually bloomed into the creation of Com-For-T street eats.
When searching for premises, Alan said as soon as he set eyes on the spot in Atlas Works, he 'knew that was the spot for us'.
The top-notch grub stop excels itself by a commitment to making everything homemade from scratch, with the only things they don't make themselves being bread and mayonnaise.
"It's all homemade from scratch, feel-good, made with love, comfort kind of food that we serve. There's no taking stuff out a freezer and just whacking it on a plate.
"The menu never stays the same, especially the cakes, they change every week. I'm always thinking about what can we do next - but there's a couple of dishes I just can't take off as people would be absolutely kicking off, such as the Chorizo Hash," he said.
To give you a taste of the inventiveness of Alan's ever-changing menu, last week, Alan curated a rhubarb custard blondie - rhubarb jam, a blondie base, with custard in the middle and custard creams sprinkled on top.
A dish that Alan says is 'absolutely flying out' as no one has ever seen it before.
Social media has been vital for the businesses success, with Alan promoting his cuisine everyday on Instagram and Facebook (with TikTok promotion on the horizon) - and during lockdown, he created Facebook Lives to share recipes with his regular patrons.
"If you're not on social media all the time, people can easily forget about you so that's important to keep on top of that," he said.
If these pictures of Alan's scran has made your tummy rumble, you can catch the street eats team from 11am til 2pm every Wednesday, Thursday and Friday (with Friday being an extra special day for dishes), and from 10am to 2pm on Saturdays.
Com-For-T street is also available to cater to private events.
