A CUMBRIA based chef will appear on James Martin's Saturday Morning show today, preparing a 'beef wellington with a twist' for the TV chef.

Michelin star chef Hrishikesh Desai, who is chef patron at Farlam Hall in Brampton, will appear on the popular ITV show, saying he thinks his stint will mark a ‘big opportunity for both the venue and the wider community'.

Mr Desai said: “It’s been a big opportunity for Farlam, for Cumbria and for everyone.

"I won the Roux scholarship in 2009 and he was a judge on the Roux scholarship competition, so he knows a little about what I was doing in the past.

“It’s an exciting opportunity to showcase what we do here at Farlam Hall, but at the same time the suppliers who provide the meat, supplies the veg... it’s good because it puts their name up there."

The chef showed off local Cumbrian produce taking Aglionby beef onto Saturday Morning to create his Tandoori Beef Wellington dish, and the recipe was a hit with TV chef James Martin.

Hrishikesh said: “I took the beef, which is a Aglionby beef, it’s from about ten minutes away from here, so I took that beef which is a long-horn Cumbrian beef and then I made a classic beef wellington with a twist, so I used some tandoori spices to cook that beef wellington and then made a sauce with more spices, it went well.

“James Martin liked it, he enjoyed the dishes, on the television he said he absolutely loved it, he said this is very new. We know a beef wellington but this was a very good spin on beef wellington, and he appreciated the subtle flavours that the spices gave.”

Talking about the impact he thinks his appearance will have, Hrishikesh said: “It means a lot. Farlam Hall is a hidden gem, it’s a beautiful grade-II listed building, it was listed in 1845 and the hall went into refurbishment during the first lockdown. A lot of money was poured in and there are beautiful rooms, stunning cottages, so I think it will sort of help Farlam for people to know where the hall is.

“It also helps to focus on the type of food we offer at Farlam Hall. We have a very classical base but there is always a twist.

“It will help Farlam to be recognised and hopefully it will also help the community around Farlam.”

The show will be broadcast today, April 29 on ITV show James Martin's Saturday Morning.
