Carlisle's Pie Demand is in high demand after officially opening its new deli-style unit. 

Just a stone's throw – or around 200 yards – from their factory on Water Street, the new outlet on the same street has been flooded with patrons since opening on June 4. 

Owners Laura and Brian Twigg are delighted to finally open after plans were announced at the beginning of April. 

“We’re thrilled, we’ve worked really hard to get here. The response we’ve had so far has been brilliant. 

“We’re really pleased and excited about the future," Laura said. 

In addition to their much-loved pies and pastries, the shop now offers a whole lot more including breakfasts, coffee from local producer John Watts, deli sandwiches, and plenty of tempting sides.

"We've got mustard mash, cheesy mash, creamy mash, peas gravy and beans, you name it," she said. 

A great addition to the Pie Demand team is Alan Simpson, former owner of Atlas Works' COM-FOR-T, well-known in Carlisle for his innovative sweet treats.

The new deli comes off the back of the business securing a tasty contract with TransPennine Express' first-class carriages.

“We haven’t got a chance to ride the train yet but we’ve had visits from Transpennine and associates seeing how things are being made.

“They are really pleased with how everything is being made, we’re also speaking to another rail operator about doing a similar thing off the back of the TransPennine contract," Laura said. 

Pie Demand has also been out with their pastry goods at The Cumberland Show over the weekend. 

The shop currently operates from Monday to Friday, opening at 7.30am and closing at 2.30pm.

Plans to extend to Saturday operation are in motion, but the owners are taking time to settle into the new operation whilst they "find their feet".
